Want a guilt free breakfast that still taste amazing? These banana pancakes will have you craving this healthy recipe every morning!
This is currently my favorite breakfast when I have a little extra time in the morning. The best part about this recipe (for me at least) is that I do not need any specific measurements I usually just eyeball everything until I get the consistency that is not too thick, but not too thin either.
First, mash up one banana into a bowl as the base of your pancake batter. Second, add the rest of your dry ingredients and choice of non dairy milk and mix until you get a consistency to your liking. You only need a little bit of vanilla extract and baking powder. Also, you may have to keep adding some of the non dairy milk or flour depending on the consistency you like.
Once you get the consistency you like, you are ready to cook! I use coconut oil to cook the pancakes, but you can use whatever oil you prefer. I usually use a spoon to place the batter on the pan to cook and then wait until you see bubbles throughout the pancake to flip over.
You can add fruit, cacao nibs, or even almond butter inside of the pancakes to spice it up a little bit, or use as a topping when the pancake is done.
